    Taco Lasagne
    Recipe Ingredients:
    Taco Lasagne..I created it myself! 2 lbs ground hamburger 1 lb cooked and drained tiny sea shell pasta (rice may be used instead) 1 16 oz jar salsa 2 packs taco seasoning 2 packs shredded Mexican Cheese
    Recipe Instructions:
    Boil pasta and sit aside. Brown and crumble hamburger add taco seasoning and salsa and heat through. In a casserole dish put a layer of shells then meat, then cheese. Then another layer of shells and so on. Bake for 25 minutes in a 350 degree oven.

    in response to your question, my husband and i use balsamic vinegar, olive oil, a couple of fresh garlic cloves, and oregano, and or , basil, depending on your taste. dip hard crusted italian bread into mixture, and stir frequently with a small spoon to keep vinegar and oil from seperating. boun appetite !

    Shrimp & Tortilla Roll-Ups
    Recipe Ingredients:
    1 1/2 cubes butter 8 oz. pkg. cream cheese 2 cans small shrimp - drained 4 Tbls chopped cilantro 4 Tbls mayonnaise 1 tsp lemon juice 1 sm. grated onion 5 eight inch flour tortillas
    Recipe Instructions:
    Soften and mix butter and cream cheese. Add remaining ingredients. Spread approx. 1/3 cup mixture on each tortilla and roll. Wrap individually in plastic wrap and refrigerate for a couple of hours. Cut into 1/2 inch slices and serve.
    Recipe Comments:
    The wrapped tortilla rolls can also be frozen and thawed as needed.

    ZUCCHINI CASSEROLE
    Recipe Ingredients:
    1 Lb. small zucchini 1 Lb. lean ground beef 1/2 onion chopped 1 clove garlic 1/2 tsp oregano 2 C. cooked rice (2/3 C dry rice) 1 8 oz. can tomatoe sauce 1 C. cottage cheese 1 egg beaten 1 C. cheddar or mozzarella cheese - grated
    Recipe Instructions:
    Cook Zucchini in boiling water for 2 minutes and drain and slice (when cooled). Cook rice. Saute meat, onions, garlic, and oregano. Salt & pepper to taste. Combine cooked rice to meat mixture and add tomatoe sauce. In a bowl, mix cottage cheese and egg. Using a buttered 13" x 9" pyrex dish, place half the sliced zucchini. Spoon on rice & meat mixture. Top with collage cheese and egg mixture. Put remaining zucchini on top and sprinkle with cheddar or mozzarella cheese. Bake in 350 pre-heated oven for 25 to 30 minutes. Until cheese is melted. cheese & egg mixture.

    This is a very good casserole served with warm garlic bread. My kids love it.

    Recipe Ingredients:
    1 1/4 cup flour 1/2 cup shortening 1 cup sugar 3 ripe bananas 2 eggs 1 teaspoon soda 1/2 cup chopped nuts 1 teaspoon vanilla
    Recipe Instructions:
    Cream flour, shortening and sugar together. Add eggs along with beaten and mashed bananas. Stir in vanilla and soda. Add nuts. Pour into greased and floured 9-inch loaf pan. Bake at 350 for 1 hour.

    Elephant Ears
    Recipe Ingredients:
    1 pkg. yeast, 1/4 c. warm water, 2 c. flour, 1 1/2 tbsp. sugar, 12 tsp. salt, 1 c. oleo, 1/2 c. scalded milk, 1 beaten egg yolk, 3 tbsp. melted oleo, 2 c. sugar, 1 tbsp.+ 1/2 tsp. cinnamon, 1/2 c. finely chopped nuts
    Recipe Instructions:
    Disslove yeast in 1/4 c. warm water. Combine flour, 1 1/2 tbsp. sugar and salt. Cut 1 c. oleo int flour mixture. Combine milk, egg yolk and yeast mixture, and add to flour mixture. Chill for 2 hours. Turn out on floured board and knead. Cover and let rest 10 minutes. Roll out to 1/4 inch thick and brush with melted oled. Combine 2 cups sugar and cinnamon. Sprinkle 1 cup over dough. Roll up jellyroll fashion. Cut into 1 inch slices. Roll each piece on sugared surface to 1/8 inch thick. Transfer to ungreased cookie sheet and sprinkle with chopped nuts. Bake for 15 minutes at 350 degrees. Makes approximately 2 dozen.

    gazpacho
    Recipe Ingredients:
    2 tomatoes 1 onion 1 peeled seeded cucumber 2 cloves garlic 2 stalks celery 1 liter V8 juice 1 tbsp olive oil 1 tbsp wine vinegar dash of hot sauce
    Recipe Instructions:
    chop all of the veggies, press garlic, and add the wet stuff. It needs to sit in the refrigerator for at least 6 hours before serving.
    Recipe Comments:
    I have seen gazpacho with olives and green peppers before, I don't like either of those. I never measure the oil or vinegar - just a slop. I usually use balsamic vinegar, it's the best!

    2 c. flour 1 tsp. salt 1 tsp. baking soda 1 c. brown sugar 1 c. sugar 1 c. margarine 2 eggs 1 tsp. vanilla 2 c. crushed potato chips
    Recipe Instructions:
    Sift flour, salt, and baking soda. Cream brown sugar, sugar, margarine, eggs, and vanilla. Combine and add crushed potato chips. Bake at 350 for 10 to 12 min.

    Sweet, salty, and crunchy.

    Sweet and Sour Pork
    Recipe Ingredients:
    oil, pork chops or strips, 8oz can pineapple chunks and juice. light corn syrup, cider vinegar, catsup soy sauce,clove garlic, green peppers, red peppers, flour and water
    Recipe Instructions:
    heat oil 2 tab. over medium heat.brown pork strips, add 1 8 oz can pineapple chunks and juice,1/2 cup light corn syrup, 1/4 cup cider vinegar, 2 tab.catsup 2 tab. soy sauce, 1 clove garlic crushed.Bring to a boil, reduce heat and simmer uncovered, stirring occasionally for 10 minutes or until pork is tender. Add 1/2 cup green peppers cut in 1" squares(can use red peppers for color). Mix 1 tablespoon flour/cornstarch with 2 tab. water stir cornstarch mixture into pork mixture stirring constantly , boil 1 minute.

    Vegetable Lasagne
    Recipe Ingredients:
    1 lb. box curly edged lasagne noodles dash of olive oil 4 oz. fontina cheese, shredded 10 oz. box frozen, chopped spinach, thawed & well-drained 1 c. shredded carrot 1 c. shredded zucchini 24-30 oz. low-fat ricotta cheese 1 egg (or 1 egg's worth of egg beaters) 1 med. onion, chopped 1-2 T. olive oil 2 T. flour 1/4 t. nutmeg 1 c. chicken broth (fat-free is fine) 1/2 c. freshly shredded Parmesan cheese
    Recipe Instructions:
    In large pot, cook lasagne noodles (add dash of olive oil to water in order to prevent sticking); rinse w/ cool water & drain. Spray sheets of foil w/ Pam and spread noodles out flat. In large bowl, combine all but 1/2 c. of ricotta, fontina, vegetables, & the egg. Spray 9x13 " glass baking dish w/ Pam and place layer of noodles on bottom. Spread w/ 1/2 cheese mixture. Repeat layers, ending w/ lasagne. ( noodles, cheese/vegetables, noodles, cheese/vegetables, noodles) In 12" skillet, saute onion in oil 'til tender. Add flour & nutmeg. Stir in broth & remaining ricotta. Cook & stir 'til mixture boils. Spoon over top of lasagne. Sprinkle w/ Parmesan. Cover w/ sheet of foil. bake 350 degrees 45 min. Uncover & broil approx. 5 min. 'til lightly browned. After removing from oven, allow to cool at least 10 min. before serving.

    Guacamole dip everyone loves!
    Recipe Ingredients:
    One ripe avocado 1/4 cup mayonnaise 1 tsp.Garlic powder juice of half a lemon (or lime) 1 cup sour cream One can of refried beans One envelope of taco seasoning At least one cup shredded sharp cheddar Shredded lettuce, cubed tomatoes, chopped olives
    Recipe Instructions:
    In a, mix the can of refried beans with the envelope of taco seasoning. Set aside. In a non-reactive bowl, mash the avocado until smooth and creamy. Add lemon or lime juice, garlic powder and mayonnaise and mix very well. Spread the refried bean mixture in a medium sized rectangular pan. For the next layer, spread the sour cream. For the next layer, spread the avocado mixture. Sprinkle the lettuce on that layer, and the cheese and tomatoes and olives on top of that. Refigerate until 15 minuted before serving. Serve with Doritos or other nacho style chips. Enjoy!

    This is my all-time favorite dip. It is fattening, so you might try it with reduced-fat ingredients or leave out the sour cream and mayonnaise. If you happen to have leftovers -- unlikely -- the avocado mixture may turn brownish. You can double the recipe for a larger group, add things like salsa or chile peppers, etc. Everyone loves this!

    Recipe Ingredients:
    1 Box Cream Cheese (reg. or low fat) 1/2 c. salsa (Pace, Alberts or homemade) package of flour tortillas
    Recipe Instructions:
    Let cream cheese soften, and mix with hot sauce. Gently spead mixture onto tortillas. Roll tortillas up and pin with a toothpick until you have sliced in small bite-size pieces. Chill, so that pinwheels hold their shape.

    Sift dry ingredients together Add sour cream, sweet milk, vanilla, egg to dry ingredients and beat for 3 min. Greas and flour pan Bake at 350 F untill done

    This is My Grandmother's recipe. She like it for making pineapple upside-down cake but its our favorte for putting fresh fruit on.

    Recipe Ingredients:
    2/3 Cup sifted powdered sugar 1 (8 oz) tub cream cheese 1 1/2 cup coolwhip (thawed and divided) 1/2 cup sugar 1/4 cup water 3 egg whites 1/2 cup hot water 1 tbsp sugar 1 tbsp instant espresso coffee granules 2 tbsp Kahlua or other coffee flavored liqueur 20 lady fingers 1/2 tsp unsweetened cocoa
    Recipe Instructions:
    Combine powdered sugar and cream cheese in bowl, and beat at high speed until blended. Gently fold 1 cup CoolWhip into the cheese mixture. Combine 1/2 cup sugar, 1/4 cup water, and 3 egg whites in the top of a double boiler; place over simmering water. Beat at high until stiff peaks form. Gently stir 1/4 of egg white mixture into cheese mixture. Gently fold in remaining egg white mixture; set aside. Combine 1/2 cup hot water, 1 tbsp sugar, instant coffee granules and Kahlua; stir well. Split the lady fingers in half lengthwise. Arrange 20 lady finger halves, cut sides up, in the bottom of an 8 inch square baking dish. Drizzle half the coffee mixture over the ladyfinger halves. Spread half of cheese mixture over ladyfinger halves; repeat process with the remaining ladyfinger halves, coffee mixture, and cheese mixture. Spread remaining 1/2 cup Cool Whip evenly over cheese mixture; sprinkle with Cocoa. Place one toothpick in each corner and in center of Tiramisu to prevent plastic wrap from sticking to top. Chill 2 hours or freeze for 2 hours before serving so it will cut cleanly. Serves 8.

    Combine all ingredients and Mix well.
    Recipe Comments:
    Please be careful handling the hot pepper. I chop it while wearing plastic gloves. If you don't it can be extremely irritating to your skin!

    Bread Pudding
    Recipe Ingredients:
    3 cups milk, 3 cups day old bread cut into 1/2 inch cubes, 2 eggs, 1/4 cup sugar, 1/2 tsp salt, 1/4 tsp nutmeg, 1 tbsp vanilla extract, 2 tbsp butter, 1/4 cup raisins
    Recipe Instructions:
    Preheat oven to 350 degrees. Grease 1 1/2 quart cassersole. Heat milk until bubbles appear around the edges of the pan. Remove from the heat. Stir in bread cubes. Break eggs into casserole dish. Beat slightly with fork. Stir in sugar, salt, nutmeg, vanilla, milk mixture, butter and raisins. Stir until seasoning and milk have combined. Set in a water filled pan. Bake about an hour.

    This recipe appeared in a local newspaper. I'm sure you can add apples if you like.

    Pina Colada Cake
    Recipe Ingredients:
    1 box Duncan Hines Butter or Yellow Cake Mix 1/2 cup Crisco Oil 1 1/2 cups water 2 eggs 1 can Coco Lopez or other Coconut mix 1 small bag Baker's Angel Flake Coconut 1 small Cool Whip
    Recipe Instructions:
    Mix cake mix, oil, water and eggs all together with mixer. Stir in 2/3 of the bag of cocunut. Pour into greased and floured 13*9 pan and bake at 350 degrees for 35-40 minutes. Whiule hot, punch holes all over the cake and pour well mixed can of Coco Lopez all over the top of the cake. Let cake cool completely and then ice with remaining Coconut mixed well with the Cool Whip. Refrigerate the cake.

    i usually leave the cake in the pan cause it does get gooey!! BUT IT"S SO YUMMMY!

    Tater Tot Casserole
    Recipe Ingredients:
    1 1/2 pounds ground chuck 1 small onion, minced 1 can cream of chicken soup 1 small package frozen Tater Tots 1 can cream of celery soup 1/2 can water
    Recipe Instructions:
    Line pan with hamburger meat (uncooked). Sprinkle minced onion on top of mead. Add cream of chicken soup, one layer of Tater Tots (frozen or thawed), cream of celery soup, and water. Bake at 350 for 1 1/2 hours.
    Recipe Comments:
    I know this takes longer than 30 minutes to cook, but it is very easy and very good. Also, please note that any "cream of" soups may be substituted.

    Recipe Ingredients:
    1 small onion 1 clove garlic 2 t. olive oil 1 lb. Italian sausage 1 small can tomato sauce 2 cans cannelli beans (white beans) 1/2 lb. ditani, cooked Saute onion, garlic in oil. At this point you can also add 1 lb. sausage. Cook until brown. Add one small can tomato sauce and one can of water. Add two cans cannelli beans - do not drain (white beans). Meanwhile boil about 1/2lb. ditani (small pasta) for about 5 minutes. Drain, but save pasta water. Add pasta and most of the water to the tomato/bean mixture. Simmer for about 30 minutes Enjoy

    2 Lbs. process cheese spread (ie Velveeta) 1/4-1/2 C. milk 1 t. tabasco or hot sauce 1 t. garlic powder 1 4 oz. can chopped green chili (mild) 1 12 oz can tomatoes with green chili
    Recipe Instructions:
    Melt cheese with milk in a double boiler. (Add milk gradually, to desired consistancy.) Add other ingredients and blend . Serve warm.

    Cocktail Meatballs or Sweet-n-Sour Meatballs
    Recipe Ingredients:
    For the meatballs: 1 LB ground beef (or turkey,) 1/2 cup stale bread crumbs, 1/3 cup minced onion, 1/4 cup milk, 1 egg, 1 T. dried parsley, 1 t. salt, 1/2 t. garlic powder, 1/4 t. pepper, 1 T. worchestershire sauce. (you can also buy meatballs pre-made. I believe Armour makes them.) For the sauce: 1 (12 oz.) bottle chili sauce and 1 (10 oz.) jar grape jelly.
    Recipe Instructions:
    Combine all the ingredients for the meatballs. Be careful not to overmix the meat. Shape into 1 inch meatballs. Saute in a large skillet until lightly brown. Drain the fat. Melt the grape jelly with the chili sauce. Combine with meatballs. (may be served in "fondue" style or kept warm in a chafing dish.

    Chicken Marsala
    Recipe Ingredients:
    8 skinless, boneless chicken breasts, enough flour for dredging the chicken, salt and pepper, to taste, aprox. 4 T. olive, 1 med. yellow onion, sliced, 1/2 c. sliced mushrooms, 2 cloves garlic, crushed, 1/4 c. dry white wine, 1/2 c. sweet marsala.
    Recipe Instructions:
    1. Mix some flour with desired salt and pepper. In a bowl or plastic bag, add the chicken and coat with flour mixture. 2. In a large frying pan, saute the onion, garlic and mushrooms in a bit of the olive oil. Saute just until onions are translucent, not brown. Add the white wine and stir to combine. Remove onion, garlic, mushroom, and wine from pan. 3. Rinse the pan and heat again. Saute the chicken breasts in a bit more of the olive oil, just until they begin to brown. Add the marsala wine and onion mixture to chicken. Simmer briefly, until the liquid is reduced slightly.

    2 T olive oil 2 c chopped onion 3 carrots, coarsely grated 3/4 t dried marjoram, crumbled 3/4 t dried thyme leaves, crumbled 28 oz. can tomatoes with juice, coarsely chopped 7 c broth (beef, chicken or vegetable) 1 1/2 c dried lentils, rinsed and picked over 1/4 to 1/2 t freshly ground black pepper 6 oz. dry white wine 1/3 c chopped fresh parsley or 2 T dried 4 oz. grated Cheddar cheese

    cut tenderloins about 3/4" thick pound to about 1/4' between plastic wrap heat oil and butter in fry pan brown meat about 2 min on each side remove season with s&p put garlic and shrooms in pan and cook for a couple of minutes. mix tomato paste and wines add to pan cook for about 5 min till sauce starts to thicken return meat to pan and cook til done I sometimes put onions in this also I serve this with mashed potatoes or pasta

    It has been a long time since I made them. I used my yeast bread recipe and I was a add this in a hand & pinch kind of method. Any yeast bread recipe will work. flour 10lbs. 1 1/2 cups shortening 1 cake yeast dissolved in "warm" water 2 tbl spoons of salt optional: 3 or 4 eggs 1/4 cup sugar water (warm) shortening powdered sugar cinnamon/sugar jelly
    Recipe Instructions:
    place flour in large bowl make a hollow place in center of flour add salt,sugar,shortening, yeast to center of flour using hands mix all ingredients together add approximiately 2 cups water add it gradually until you get a solid mixture. need dough until you have a solid smooth texture. roll into big ball. cover with cloth and let rise. when risen punch down and need again and then let raise one more time. when you are ready to make your elephant ears pinch off a piece of dough about the size of your fist. pull it apart gently until you have it about 3" by 6" oval and pulling so your edges are thicker than the center. melt grease in your deep fryer and drop your dough into the hot grease (375 to 400 degrees) hotter grease keeps your food from tasting greasy. when it floats to the top and is golden brown take out of the pan and drain on paper towel. while hot you may add your powdered sugar, cinnamon/sugar or place jelly in the center. just remembering makes my mouth water.     To make 2 quarts of egg nog you will need 1 1/2 quarts fresh milk, 2 c. whipping cream, 3-4 eggs, seperated, 3/4 - 1 c. sugar, 1 tablespoon vanilla, nutmeg to taste

    Using a blender is the fastest way to whip cream, but becare or you'll have butter! Beat the cream until it whipped. With an electric mixer beat the egg whites until stiff but not dry. Mix the sugar into the milk, stir well. Beat the egg yolks up well and stir them into the cream. Now add the cream and the egg whites to the milk, stir in the vanilla. Dust each glass with nutmeg just before serving.

    This is easier than it sounds. I add a couple extra eggs to a cup or so of this "nog" and make the best french toast you can eat. I dust each piece of toast with nutmeg before frying. Good stuff, but rich.

Cook and stir mushrooms in same skillet until light brown. Stir in flour. Cook over low heat stirring until mixture is bubbly. Remove from heat. Add enough water to reserved mushroom liquid to measure 1 cup. Stir liquid and bouillon into flour mixture. Heat to boiling, stirring constantly. Boil and stir 1 minute. Pour on meat. 4 servings.

    500gms dried green peas 1 onion 3 medium sized potatoes diced 2 medium sausages 2 stock cubes - ham 2 cups of water

    soak peas for 6hrs or overnight in water put peas, water and stock cubes in saucepan and simmer for 20mins, skimming off froth until tender, add extra water if necessary. Chop sausages into bite size pieces. Add onions, potatoes and simmering until tender. If you want the soup chunky, don't blend but leave it as is. Add salt and pepper to taste. Serve with Olof Swedish Crispbread and enjoy.

Chop the jalapeno slices very fine. You can use a food processor, but don't puree. The best kind of jalapenos to use are those bottled for nachos or pizza. Add them to the mixture. 4. Heat the mixture to boiling. Continue to stir about 3 minutes and remove from the heat. 5. Let the sauce stand until cool, and then put in a tightly sealed container and refrigerate.     Ribs any amount you desire, BBQ sauce(any brand or homemade we prefer KC Masterpiece)

    Cut ribs in to sections that are easy to handle then place in aluminum foil and cover with sauce make sure you get both sides of each section wrap them up and chill for 24 hours. Leave them wraped up and bake at 250 degrees for 3 to 4 hours. Remove from foil and cover with fresh BBQ sauce and grill on BBQ until sauce is baked on but not burned (I do this 2 times)

    1 1/2 cups water, 6 cups sugar, Food coloring, 3 6-inch lengths of string
    Recipe Instructions:
    Bring water ot a boil in a saucepan. Remove from the heat and add 3 cups of the sugar, stiring until it dissolves. Slowly add the remaining sugar, reheating water if necessary. When all the sugar has dissoved, pour into three heat proof jars or glasses. Stir in 3 drops of food coloring into each jar. Tie each lenght of string around a pencil and lay atop the jars so that the string hangs down in to the liquid. Crystals will begin to form in 1 hour and continue to solidify for several days. If a layer forms on the surface of the water break it. When the water evaporates the candy is ready. Makes 3

    8 ounces cream cheese, 1/2 cup shredded Monterey Jack cheese 2 T. white wine(optional) 12 ounces crab meat and 12 ounces shrip, thawed and drained, Tortillas, SAUCE:1/2 c. sliced green onion, 3T. butter, 1/4 c. flour, 1/4 t. salt 1/4 t. pepper, 2 3/4 c. milk or cream 1 c. shredded Monterey Jack, Paprika
    Recipe Instructions:
    FILLING: combine cream cheese 1/2 c. Jack, wine, and seafood. Beat in a processor until smooth. Fill Tortillas or crepes with filling roll and place seam side down in a lightly greased casserole dish. Sauce: Cook onion in butter until tender but NOT browned. Stir in flour, salt and pepper. Add milk or cream and Cook until bubbly. Add remaining cheese and stir until melted. Pour sauce over and sprinkle with paprika and bake at 350 for 15 to 20 minutes. Another great serving tip is to bake puff pastry sheels and remove centers then heat filling and spoon into shells and top with sauce.

    Hamburger casserole
    Recipe Ingredients:
    1 lb. ground beef 1 8oz. can tomato sauce 1 14oz. can diced tomatoes 1 4oz. can chopped mushrooms 1 small can whole kernel corn (optional) 2 cups grated cheddar cheese 2-3 cups cooked pasta shells or elbows (small) 2T. Worcestershire sauce 2t. chili powder salt and pepper to taste
    Recipe Instructions:
    Cook noodles till al dente. In large skillet or small dutch oven, brown ground beef and drain. Return to medium heat and add next 4 ingredients. Mix well. Stir in 1 cup of cheese and add noodles. Then add worcestershire sauce, chili powder, and salt & pepper to taste. Mix together thoroughly and bring to a boil. Sprinkle last cup of cheese on top of casserole, cover, reduce heat and simmer for approx. 30 min or until cheese is melted. Enjoy!

    If you like, you can sautee 1/2 chopped onion in 1T. butter before you brown the ground beef. Also, I salt and pepper my beef while it's browning. I find it makes the casserole much more flavorful. Then I adjust the level of salt and pepper in the end to suit my taste. I have also found that Hunt's tomato sauce and diced tomatoes seem to add extra flavor to this dish as well. I've used other sauces and canned tomatoes, but I always go back to Hunt's. Finally, if you want to adjust the amount of cheese, you can add more or less as you like depending on your taste.

    1 pound ground beef, 1/4 cup uncooked regular rice, 3/4 cup finely chopped onion, 1 tsp salt, 1/4 tsp pepper, 1 egg, 1 (10 1/2 oz) can condensed tomato soup, 1/2 cup water, 1 tsp Worcestershire sauce.

    Combine ground beef, rice, onion, salt, pepper and egg in bowl. Mix lightly but well. Shape mixture into 24 1 inch meatballs. Blend together tomato soup, water and Worcestershire sauce in 10 in skillet. Cook over medium heat until mixture comes to a boil, about 3 minutes. Add meatballs to simmering sauce, spooning sauce over all. Return mixture to a boil about 1 minute. Reduce heat to low. Cover and simmer 45 minutes, turning meatballs once or twice during cooking. Can also be done in electric frypan - increase water to 3/4 cup

    3 TBS butter, 3 TBS minced shallots, 2 TBS flour, 1 cup dry white wine, 1 cup beef bouillon, heated, 1 pint sour cream, 1/2 tsp. black pepper, 1 bay leaf, 1 tsp. Worcestershire sauce, 1 TBS vegetale oil, 2 pounds lean tenderloin of beef, cut into 1 1/2 x 1/4 in strips.
    Recipe Instructions:
    1. In a 3 quart saucepan, melt butter over high heat, and saute shallots until golden brown. 2. Using a wire whisk, mix in flour. Cook for a minute over medium heat to remove the raw taste of the flour. Whisk in wine and hot bouillon. Bring slowly to a boil, stirring occasionally. 3. Stir in sour cream, pepper, and bay leaf. Simmer slowly for 10 minutes. 4. Add Worcestersire sauce and remove bay leaf. Keep warm. 5. In a heavy skillet, heat oil until very hot; brown beef strips evenly on all sides, turning often. Drain well. 6. Stir beef strips into sauce; bring to a boil, and serve at once with plain rice or noodles or wild rice.

    Brown pork slowly in hot shortening. Add 1 cup water, bouillon cube, and 1/4 tsp. salt:mix well. Cover and simmer till tender, about 1 hour. Meanwhile, drain pineapple, reserving syrup. Combine brown sugar and cornstarch;add reserved pineapple surup,vinegar,soy sauce and 1/2 tsp. salt. Cook and stir over medium high heat till thickened and bubbly. Remove from heat. Add sauce to pork;mix well. Stir in pineapple,green pepper, and onion. Cook over low heat 2 to 3 minutes or till vegetables are tender crisp. Serve over rice. Makes 6 servings

    Boil macaroni until tender, rinse in cold water, and drain. Melt 1 tbsp butter in skillet and add onion. Once onions are translucent, add fresh mushroom and cooked until tender. In medium sized casserole dish, combine macaroni, onion and mushroom mixture, tuna (drained), mushroom soup, sour cream, salt & pepper. Melt remaining butter and mix with bread crumbs. Sprinkle over top of casserole. Top with grated cheese and bake in over approx. 30 mins. at 350 degrees F.

    35 Soda crackers with unsalted -tops 1 c Brown sugar, packed 6-oz Semisweet chocolate pieces 1 c Butter or regular margarine 3/4 cup slivered almonds

    An absolutely fabulous candy! Tastes and looks like butter crunch. And it all starts with a little soda cracker. Your friends will never guess the basic ingredient. Lightly grease 15x10x1-inch jellyroll pan. Line bottom of pan evenly with soda crackers. Combine butter and brown sugar in 2-quart heavy saucepan. Cook over medium heat, stirring constantly, until mixture comes to a boil. Continue cooking 3 more minutes, stirring constantly. Pour mixture evenly over crackers. Bake in 375F oven 15 minutes. Remove from oven. Sprinkle with chocolate pieces. Let stand 5 minutes. Spread melted chocolate over crackers. Sprinle with almonds. While still warm, cut between crackers making 35 squares.     Recipe Instructions:
    Combine all ingredients for meatballs and roll into tiny 1/2 ounce balls. Lightly oil a stock pot and quicly saute meatballs, being careful not to crowd them. When meatballs are browned add homemade stock (or a good quality, low sodium canned stock if no homemade stock is available). Season with salt to taste. Bring to a boil and simmer at a low heat for 15 minutes.     Slice onions lenghtwise you need fairly large pieces. slice garlic into slivers . put roast in a roasting pan sprinkle with pepper, dont put on salt untill half way through cooking you dont want a dry roast. Lay garlic all over the roast then lay onions over roast. Cook roast at 300 degrees cook time depends on size of roast use a meat thermometer and cook untill meduim rare. use onions and garlic to make a gravey. red wine adds a wonderful flavor to the gravey also.

    Cream shortening and sugar. Add eggs and beat well. Add cocoa and coloring to first mixture. Add salt, flour alternately with buttermilk. Add vanilla.     Venison rinsed (use as much as you like, whatever cut of venison you like). Lawry's 30 minute marinade (I use the Caribean Jerk)

    By mixing in a little lemon juice to a batch of scramble eggs I have increased my holding time of the eggs on a steam table incredibly. Without the juice my eggs were turning grey/green in about an hour, with the addition of juice they stayed nice an yellow for 2 1/2 hours plus. I didn't leave them any longer but they still were nice in color a even longer.

    Recipe Instructions:
    1. Beat egg yolks and sugar in 2qt pan with wire whisk Beat in milk. Heat to boiling over med heat, stir constantly, reduce heat to low boil and stir for 1 minute, then remove from heat 2. Put plastic wrap directly on yolk mix to prevent "skin from forming", place in frig. for 1 hr 3. Mix egg mixture and cheese with wire whisk until smooth. Beat in Whipping cream and add vanilla in chilled med bowl with electric mixer on high until stiff. 4. separate ladyfingers. Mix rum and expresso or coffee mixture. You can either dip the ladyfingers in the rum mixture or place them in a pan and drizzle them. 5. arrange the ladyfingers in a single layer in an 11x7x1 1/2 pan ungreased. Spread half of chease mixture then half of whipped cream over ladyfingers repeat in layers. Sprinkle with cocoa. Cover, refrigerate for 4 to 6 hrs.

    I have dipped my ladyfingers before and if you choose that method..keep in mind to dip quickly. The ladyfingers soak-up the rum mixture quickly and will tear apart if not dipped quickly. Drizzling works pretty well.

    1 cut-up chicken salt and pepper to taste 4 tb. butter 1/2 c. chopped onion 1-2 cloves garlic, minced 4-8 oz mushrooms (canned ok) 1 bay leaf 1/2 c dry white wine 1/2 c uncooked rice 1 c chicken broth

    Sprinkle chicken pieces with salt and pepper, brown in butter in large skillet with lid. After turning the chicken, sprinkle onion, garlic and mushrooms over chicken. Add bay leaf. When brown on both sides, add wine and cook until almost evaporated. Move chicken to one side, add broth and rice. (Don't let rice rest on chicken.) Cover and cook until chicken is done and rice is tender.

    I called my friend who has been a manager at Boston Market for 8 years. He said that he was unsure if the flavor packet had anymore than those 3 ingrediants because they no longer make their potatoes in house. They are made at a factory somewhere now and all they do is heat them up. So without the flavor packets there to check he couldn't be sure of any additional ingrediants. He did say he has a couple of the flavor packets at home and could check later.     Recipe Ingredients:
    2-3 avacados, 1-4 chiles (depending on how hot you like things and the type of chile you use), 1/2 to 1 tsp. dry cilantro or 1/8 to 1/4 cup fresh cilantro, 1 small onion or a couple of thin slices of a larger one finely (should be around 1/3 cup or so), 1 medium to small tomato
    Recipe Instructions:
    Finely dice the onion and chiles then chop the cilantro if using fresh. If you have a mortart and pestal then mash these 3 ingrediants to a paste, if no motar & pestle is available that is fine. You can crush them on your cutting board with the flat of a chefs knife or chop them together if you like. Mash the meat of the avacados, no need to make it smooth if you don't want to. mix the ingediants then dice the tomato and add that. If you are not going to serve right away then you may wand to put a little fresh lime or lemon juice on it, lime would be my first choice as it complements the cilantro better.
    Recipe Comments:
    When choosing chiles I recomend using serrano chiles as they have delicious taste (they are green and range from 2-4 inches in length and are slender), but if serranos are not available jalapenos or any of you favorite chiles are fine to use. I tried not to be too exact on the recipe. All recipes should be able to be adjusted to taste, IMHO. I learned this recipe from a Mexican cookbook by Diana Kennedy who has studied the art of authentic mexican cuisine for many years.     Recipe Ingredients:
    1/2 green bell pepper chopped 1/2 round onion chopped 1 bunch cilantro chopped 1 whole jalapeno (leave the seeds and veins for hot salsa) chopped 1 large can whole tomatoes (with liquid) 1 sm can tomato sauce 1 whole tomato chopped garlic powder, salt, and pepper to taste
    Recipe Instructions:
    put each item (except the fresh tomato)in a food processor and blend. After it is all blended add chopped tomato and seasonings, but only blend this a little (you want it to be chunky). Refrigerate and enjoy with tortilla chips.
    Recipe Comments:
    It is best that you chop everything befor putting it into the processor. If you want you can add another jalapeno to make it even hotter.

    Creamed Chipped beef
    Recipe Ingredients:
    Cream, chipped beef, shallots, salt and pepper
    Recipe Instructions:
    Heat the chipped beef in a nonstick pan, remove and place in a bowl. Dice and add shallots (or onion if you prefer) with a liitle butter. Cook on low until opague (not brown). Slowly add cream and reduce. Add beef, salt and pepper (to taste) and reduce more until thick. Serve over eggs or toast.
    Recipe Comments:
    There is another recipe that I learned in the Marines, an alternate if you will. Hamburger, onion, flour, milk, worchestershire, salt and pepper. Fry and crumble the hamburger, drain off excess fat (not all of it) add a little worchestershire sauce then the flour and make the roux, add milk until you have a gravy. Salt and pepper to taste. Serve the same way.

    Red Lobster Cheddar Biscuits
    Recipe Ingredients:
    Ingredients:2 cups Bisquick, 1/2 cup cold water,3/4 cup grated,sharp chedder cheese,1/4 cup butter,1 tea. parsley flakes, 1/2 tea. garlic powder, 1/2 tea. italian seasoning
    Recipe Instructions:
    Mix first three ingredients,well. Preheat oven to 450 degrees.Drop by spoonfuls onto ungreased baking sheet. Bake for 8-10 minutes until golden brown. Mix spices and butter. Brush mixture over tops of warm biscuits before removing from baking sheet.

    Rum Cake
    Recipe Ingredients:
    1 box Duncan Heins yellow cake mix (plain) 2/3 cup vegetable oil 4 large eggs 4 tablespoons McCormick's rum flavoring plus enough water to equal 1 cup Topping 1 cup granulated sugar 1 stick butter or margarine (regular NOT whipped) the remaining 4 tablespoons rum flavoring plus enough water to equal 1/2 cup
    Recipe Instructions:
    Preheat oven to 350 degrees. Mix the cake ingredients well. Pour batter into a Bundt pan that has been sprayed with Bakers Joy. Bake for 1 hour or until the cake is browned and springs back when touched lightly. Topping: Five minutes before the cake is done, mix topping ingredients in a small saucepan and simmer 2to 3 minutes. Pour slowly over the cake immediatly after taking it from the over making sure that some is poured along the edges of the cake. Allow to cool in the pan before turning onto a plate.

    This cake is great to take to potlucks or any where that one would take a cake. I do not put any topping other than the rum mixture on it and get rave reviews every time that I have taken it to a get-together.

    Banana Nut Bread
    Recipe Ingredients:
    2 C Flour 1 C Sugar 1 tsp Salt 2 Eggs 3/4 tsp Baking Soda 1 tsp Vanilla 1 1/4 tsp Baking Powder 4 Bananas (mashed) 1/2 C Butter 1 C Pecans (chopped)
    Recipe Instructions:
    Sift together flour,salt,soda & powder. Set aside. Cream butter. Add sugar,eggs & vanilla. Stir till smooth. Stir in mashed bananas. Fold in flour mixture and nuts. Bake in 2 bread pans. Bake at 350 for 50 minutes. Cover loosely with foil after 30 minutes of baking.

    1 pkg German Choc. Cake Mix 1 bag caramels 1 cube margerine 1/4 cup milk 1 cup Choc. Chips 1 cup ground or fine chopped peanuts

    Mix cake mix as directed on box. Pour 1/2 of batter in 9x13 prepared pan & bake @ 350 for 20 min. Melt bag of caramels with 1 cube of margerine and 1/4 cup milk. Pour over cake. Sprinkle 1 cup choc. chips & nuts. Spread rest of batter over top. Bake @ 250 for 10 min & then 350 for 15 mi
