3 boneless skinless chicken breasts
1/4 c. vegtable oil
1/4 c. soy sauce
1/4 c. dry sherry
slivers of fresh ginger root
about 20 6"x6" squares aluminum foil
oil for frying
DIRECTIONS
Cut the chicken breasts into pieces approx. 1 inch square.
Marinate in oil, sherry, and soy sauce for at least an hour.
Place 1 piece of chicken on a square of foil and fold corner to corner creating a
triangle. Fold over seams a couple of times to make an envelope..(the packets can be
prepared in advance and fryed later.
Put at least 1 inch of oil in a heavy skillet ...fry packets appox, 2 min. place on paper
toweling. Guests open their own packets at the table..
