BEEF BURGERS PROVENCAL

Mix 1 pound lean ground beef, 1/4 cup shredded zucchini
and 1/4 cup seasoned bread
crumbs. Form into eight 1/2-inch-thick patties. Brown
on both sides in a large nonstick
skillet for 3 to 4 minutes. Stir in 2 1/2 cups sliced
zucchini and a 14 1/2-ounce can
pizza-style tomatoes. Bring to a boil, reduce heat,
cover and simmer 7 to 9 minutes,
turning patties and stirring 2 to 3 times, until zucchini
is crisp-tender. Add a drained
16-ounce can small white potatoes and simmer 3 minutes
longer, or until patties are no
longer pink in center.
