Eula's Frozen Fruit Salad
1 can (1lb) Fruit Cocktail
1 can (1lb) apricot halves
1 can (1lb) chunk pineapple
4 oz. mini marshmallows
1 pkg. unflavored gelatin
1 jar (4 oz.) maraschino cherries
4 oz. soft cream cheese
1/2 cup salad dressing
3/4 cup whipping cream, whipped
Extra apricots and mint for garnish
Drain first three ingredients and reserve juice. Place fruit in large bowl, add
marshmallows and set aside.
Place fruit juice in saucepan, stir in gelatin, place over medium heat. Stir until gelatin is
dissolved.
Cool slightly, pour over fruit. Stir in diced cherries and cherry juice.
In separate bowl, blend cream cheese and salad dressing. Add to fruit mixture, mixing
well.
Cover and chill until partially set. Fold in whipping cream. Transfer to 7 1/2 by 11 inch
serving dish.
Cover and place in freezer 4 o 6 hours or overnoght. Cut into squares to serve. Garnish
with apricots and mint sprig.
