Subj:  Old South Easy Chicken & Dumplins

CHICKEN & DUMPLINS

CHICKEN:
1 small frying chicken
 2 tsp. salt
1 tsp. blk. pepper
1/4 stick margarine

I know you ain't fryin' it but you still got to use 
a fryin' chicken anyway.  Cut chicken in
pieces and place in boiler, cover  with water and add 
salt, pepper and margarine. Cook
until done.

DUMPLINS:
1 1/2 c. plain four
2 tbsp. shortening
1/4 c. water

Place flour in bowl, add shortening and water, stir 
in a ball.  Roll out on flour board and
cut in small squares. Add to boiling chicken. If you 
don't have a flour board, just about
any board will do as long as it don't have splinters. 
 Makes a serving for 6 unless you got
one that eats like Joe, then maybe 4.

or not Joe & Deb are REAL people.  They have owned 
and operated Joe & Deb's
Resturant in Birmingham, Al. for  longer than I can 
say, for fear Deb might crown me
with a skillet the next time I go in.

I've become good friends with them over the years, as 
have so many others.  One reason
is they're fun to be around and another is  they make 
the most unbelievable onion rings
I have ever tasted. I've been trying to get them to 
market the batter and  we thought
about offering  their cookbook Free along with each 
families first order of onion-ring 
batter.  (Shipped dry. All you do is ad the water, and 
of course onions). The cookbook is 
good Ol'-Time Southern Cooking and quite entertaining 
to read while you're waiting for 
the water to boil.  Let me know what you think about 
this idea.  We need all the input we 
can get.
