Chicken Dijon
10 minutes preparation 14 minutes cooking time
2 whole chicken breasts halved and skinned @2lbs
2 tablespoons Dijon mustard
1 teaspoon lemon juice
1/4 teaspoon FINE black pepper
2 green onions chopped fine
1/2 cup soft white bread crumbs @1 slice
1. perheat the broiler and lighty grease a rack. Broil
the chicken breasts 5 to 6" from the
heat for 5 minutes turn and then 5 minutes more
2. combine mustard , lemon juice , pepper & green
onions.
Coat the broiled chicken with the mixture place back
in broiler cover lightly with 1/2 of
the bread crumbs broil 2 minutes.
3. Turn over breasts and cover with balance of the bread
crumbs broil 2 minuteslonger
or so.
