8 Eggs
4 Inch corn tortillas
Salt and pepper, to taste
2 c Salsa, heated
1 c Shredded low-fat Monterey
-Jack cheese (4 ounces)
Fry eggs in a nonstick skillet or poach in a microwave oven.
Meanwhile, lightly brush tortillas with water, wrap in paper towels
an microwave on high (100 percent power) 30 seconds. Place an egg on
each tortilla, season with salt and pepper, top with salsa and
sprinkle with cheese.
