Bouquet Garni
Indispensible to French chefs, a bouquet garni imparts
a subtle
herb flavor to stews, such as the cassoulet. It usually
consists of
bay leaves, peppercorns, parsley stems, sprigs of thyme
and
garlic. Sometimes other ingredients are also included,
depending
on the nature of the recipe.
Servings: 1
3 bay leaves
12 peppercorns
10-12 parsely stems
1 sprig fresh or 1 tsp dried thyme
2-3 whole cloves garlic
Place all ingredients in the center of a 12-inch square
of
cheesecloth. Tie the ends together. Use in recipes
as indicated.
