Subj:  French Onion Soup

Here is the worlds easiest way to make FOS.
Makes 4 servings
1 Large onion
2 Cans of beef broth (It is much better if you dont 
use double strength)
4 T butter
1 loaf of some kind of crusty bread (French bagette, 
sourdough) Leave it out for about 4
hours before preparing the soup.
1/3 Cup  of burgandy cooking wine
Lots of shreaded mozzarella and shreaded FRESH parmasean
Thinly slice the large onion and seperate the rings. 
 Melt the butter in a large frying pan
and cook the onions until they are paste the saute stage 
and they are starting to get
brown.  Be careful not to burn them.  In another pan 
bring the beef broth to a gentle boil.
 Add the burgandy cooking wine and the onions and cook 
for 15 minutes.
(For this part I use ceramic soup bowls).  Tear (do 
not cut) the bread off in 4 inch
sections.  Fill the bowl about half full with soup and 
then put the bread in>  it should be
sticking above the rim of the bowl by about an inch. 
 Ladel some more of the soup over
the bread and then cover the top with LOTS OF CHEESE. 
 Stick under the broiler until
the cheese is melted. Prepare yourself for a challanging 
night of eating.  It is a bit difficult
and messy, but good!
