ITALIAN-STYLE CHICKEN SALAD

This simple salad is dressed with the marinade from
bottled marinated artichoke hearts.
Serve with red-wine vinegar if you prefer a more acidic
dressing.
2 jars (6 ounces each) marinated artichoke hearts,
undrained
4 grilled chicken-breast halves, cut in bite-size pieces
6 cups bite-size pieces romaine lettuce
2 jars (6 ounces each) roasted red peppers, drained
and cut in bite-size pieces
1 cup chopped celery
1/2 teaspoon each salt and pepper
1. Pour artichoke hearts and marinade into a large serving
bowl. Cut artichoke hearts in
half.
2. Add remaining ingredients. Toss to mix.
