Subj:  BEEF STROGANOFF

Serve this dish with buttered noodles and a green vegatable.

1 1/2 pound beef tenderloin or sirloin,cut in 2x1 inch strips
1/2 teaspoon salt
1/4 teaspoon pepper
1 onion, cut in 1/4 slices
4 tablespoons butter
2 tablespoons flour
1 cup beef stock
1 teaspoon Dijon mustard
1/4 cup sour cream, at room temperature

Spread the beef strips on a baking sheet and sprinkle with salt and pepper, top with the
onion slices and let stand at room temperature for 2 hours. Melt 2 tablespoons of the
butter in a skillet and stir in the flour. Mix in the beef  stock and heat, stirring until
thickened. Blend in the mustard and remove from the heat. In another skillet, melt the
remaining butter, add the beef (but not the onions) to the sauce and simmer for 15
minutes. Remove from the heat and stir in the sour cream. Serve the onions separetly
or reserve for another use.
