Oatmeal Chippers
1 cups firmly packed light brown sugar
1 cup shortening
2 tablespoons sorghum molasses
2 teaspoons vanilla extract
2 eggs
3 cups quick-cooking rolled oats
1 cup all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1/2 cup chopped nuts
1 12-ounce package (2 cups) semi-sweet chocolate chips
Heat oven to 350 degrees. Grease a13x9x2 inch pan. In a large bowl, beat brown sugar
and shortening until light and fluffy. Addmolasses, vanilla and eggs; blend well. Stir in
oats, flour, baking soda and salt. Blend well. Stir in nuts and chocolate chips. Spread in
greased pan. Bake at 350 degrees for 20 to 25 minutes or until golden brown. Cool
slightly and cut into squares.
