Lizzie's Banana Bran Muffins

1 C unbleached all-purpose flour
1 C whole wheat flour
2 C wheat bran
2 1/2 tsp. baking powder
2 1/2 tsp. baking soda
1 tsp. salt
1 tsp. ground cinnamon
2 large eggs
2/3 C brown sugar
1/3 C orange juice
2 tbsp. vegetable oil
1 1/2 C buttermilk
1 tsp. vanilla extract
3 bananas, mashed

Preheat the oven to 400 o F. Lightly grease or line with paper liners 24 regular muffin
cups. Whisk the dry ingredients together. Beat the eggs, sugar and oil with an electric
mixer on medium until smooth. Add buttermilk, banana, vanilla and orange juice and
mix again. Whisk dry ingredients together and add to moist ingredients, mixing just
long enough to combine. Spoon into muffin cups so they are 2/3-3/4 full. Bake for 15-20
minutes until muffins are lightly brown and a toothpick inserted in the center of each
comes away clean. Cool muffins in tins on wire racks for 10 minutes. Serve warm or
cool completely on a wire rack before storing. Do not store in an airtight container or the
tops will get gummy and unattractive.
