4c unbleached white flour
3 pkg yeast
4cups warm water
6 tablespoons oil
2tablspoons salt
2tablespoons sugar
3/4 cup honey
1cup wheat bran
4cups wheat flour
1cup untoasted wheat germ
1cup oatmeal
1cup rye flour
Sprinkle yeast over 1/2 cup warm water to disslove. Add balance of warm water
sugar, wheat bran, wheat germ, oatmeal, rye flour, 2 cups flour, salt, oil and
honey. Beat well to make a sponge. Let rise until bubbly, about 30 minutes. Add
whole wheat flour and remaining unbleached flour to make a stiff dough. Knead
until smooth. Cover, let rise until double in bulk. Punch down. Form into
loaves or rolls. Let rise again until double. Bake at 350 F for 45 minutes to an
hour. Makes 4 loaves.
