Strawberry Nut Bread

1 cup butter
1 tsp. lemon extract
3 cups all purpose flour
1 tsp. cream of tartar
1 tsp. baking soda
1/2 C sour cream
1 C chopped walnuts, almonds or pecans
1 1/2 C sugar
4 eggs
1/2 tsp. salt
1 C strawberry preserves or jam

Cream the butter with the sugar and flavoring. Add the eggs, one at a time, beating well
afer each addition. Sift together the flour, salt, cream of tartar and soda. Combine the
preserves or jam with sour cream and add, alternating with the dry ingredients to the
creamed ingredients. Beat well and stir in nuts. Divide batter between two greased and
floured  loaf pans. Bake at 325 for 50 minutes or until a pick stuck in center of loaf comes
out clean. Cool ten minutes in pan before removing to wire rack to cool completely.
