1/2 lb Pork or beef sausage,
-crumbled
1 c Chopped red onions
1/2 c Chopped bell pepper, red and
-green
2 tb Bacon drippings
1 lb Chicken livers, chopped
4 Green onions (green tops
-included), chopped
2 tb Parsley
2 Garlic cloves, minced
2 c Cooked rice
1 ds Red pepper
1 tb T.J.'s Magic Creole booster
-spice
1 tb T.J.'s Louisiana Bayou spice
1/4 c Water
Saute sausage, onion, and bell pepper in bacon drippings until brown.
Add chicken livers, green onions, parsley and gar- lic. Cook 5
minutes. Combine with rice, red pepper and season- ings. Add water
and cook until absorbed. PER SERVING: 515 calories, 30 g protein, 34
g carbohydrate, 35 g fat (12 g sat 578 mg cholesterol, sodium content
cannot be determined due to lack of nutrition information on Creole
seasoning, 1 g fiber.
