Here's one from "Wild About Potatoes"by Marie
Bianco:
2.5 C coarsely shredded raw potatoes
0.5 C all-purpose flour
1 small onion, grated
1 egg
salt and pepper to taste
vegetable oil
In a small bowl, mix together raw potatoes, flour, onion,
egg, salt and pepper.
In a large, heavy skillet, pour in enough oil to coat
bottom. Heat oil over medium heat.
Pour in scant 1/4 C. of potato mixture, 3 or 4 at a
time, and flatten into circles w/ back of
spoon.
Fry for 3 minutes or until browned and crisp; turn and
brown other side. Add
additional oil as necessary. Drain on paper towels.
If thinner pancakes are desired, add
1-2 T. vegetable oil to batter.
