Spinach Fettucine Alfredo
1 lb. spinach fettucine
1/2 lb. unsalted butter, cut into chunks
1/2 cup grated Parmesan cheese
1/2 cup heavy cream
1 TBSP unsalted butter
2 cloves garlic, sliced
Freshly chopped Italian parsley
Cook pasta until al dente, drain. Place pasta in heated bowl and add butter, cheese, and
heavy cream. Toss well. Heat one TBSP butter in a small skillet and saute garlic, taking
care not to burn it. Add garlic to pasta and toss again. Sprinkle with parsley. Makes 8
first-course servings.
