Subj:  Southwest Mac & Cheese

This recipe is from Gourmet, but I've made a few changes. It serves 2.

1/2 cup chopped red pepper
1/2 cup chopped green pepper
1 finely chopped jalapeno
1/4 lb. ham, diced
2 T. oil
1-1/2 T. flour
1/2 cup milk
1/2 cup plain yogurt
grated cheese to taste
Crushed taco chips 

Saute peppers in oil for 5 minutes. Add flour and cook for another 5 minutes. Add milk,
yogurt, and ham and cook stirring for five minutes, or till thick. Take off heat and stir in
grated cheese. Cover with crushed taco chips and browning under a grill. You can also
add some ground cumin seed to the sauce.
