Pumpkin Cookies
2 c. Iight brown sugar (firmly packed)
2 c. cooked or canned pumpkin
l c. salad oil
2 tsp. vanilla
4 c. sifted all-purpose flour
2 tsp. soda
2 tsp. baking powder
1 tsp. each salt, cinnamon and nutmeg
1/2 tsp. ginger
2 c. raisins
l c. chopped nuts
Beat together brown sugar, pumpkin, oil and vanilla in mixing bowl. Sift dry
ingredients together, add to pumpkin mixture and stir until smooth. Blend in
raisins and nuts. Drop by spoonfuls on oiled baking sheet. Bake at 350 degrees
for 12 to 15 minutes. Two eggs may be added if desired. Yield: 7 dozen.
