No Fat Banana-Raisin Muffins
2 cups whole-wheat flour
3/4 cup frozen apple juice
l cup unprocessed bran
1 cup rolled oats
1/2 c plain low-fat yogurt
11/2 tsp baking soda
1cup mashed bananas
2 egg whites
1c raisins
Combine all dry indgrents. Beat the egg whites until stiff . Add
apple juice, yogurt, bananas, and raisins to the flour. mixture and stir to blend. Fold in
the egg whites and mix well. bake at 400 for 20 minutes.
