Banana-Walnut Muffins
2 cups oat bran flakes cereal
1 l/2 cups mashed bananas (about 3 medium)
1 egg
l/2 cup buttermilk
1/4 cup butter, melted
1 l/2 cups all-purpose flour
1/4 cup packed brown sugar
1 tablespoon baking powder
1/2 teaspoon ground cinnamon
1/4 teaspoon baking soda
1/4 cup chopped walnuts
Preheat oven to 400 F. Spray 12 (2l/2-inch) muffin cups with nonstick cooking spray
Combine cereal and butter in medium bowl. Let stand 5 minutes. Combine flour,
brown sugar, baking powder, cinnamon and baking soda in large bowl. Add cereal
mixture to flour mixture, stirring just until moistened. Spoon evenly into prepared
muffin cups. Sprinkle with walnuts. Bake 20 to 22 minutes or until wooden pick
inserted in center comes out clean.
