Subj: Nine Grain Bread

(for a 1.5lb Welbilt machine)
I buy bulk nine grain cereal at the local health food market ("Mother's" in Costa Mesa,
CA). I start by pouring 1 cup of boiling water over 1/4 cup of the cereal. When that has
cooled to lukewarm, I start to make the bread:
Add to the bread machine in this order:
1 scant tablespoon active yeast. (I buy a pound of it at Smart n' Final for two bucks and it
keeps a year in a ziplock.)
2 cups of Gold Medal Better for Bread flour
1 cup of whole wheat flour
1 1/2 teaspoon salt
1 tablespoon safflower oil
1 tablespoon unsulphered molasses
1 tablespoon honey
pour in the water/9-grain cereal mix
1/4 cup of water
And as they say, "Press Start". Sometimes I throw in a handful of raisins when the
machine beeps for them.
