GINGERBREAD-2 - Best-ever gingerbread
This moist gingerbread is a good recipe for the holidays or
any other time. This recipe was originally published in
Sunset magazine before I was born.

1 cup white sugar
1/4 tsp salt
1 tsp ginger
1/2 tsp cinnamon
1/2 tsp powdered cloves
1 cup vegetable oil

2 tsp baking soda (That's baking soda, not baking
powder)
1 cup boiling water
2 1/2 cups
all-purpose flour, unsifted
2 eggs, well beaten
PROCEDURE
(1) Mix the sugar, salt, ginger, cinnamon and cloves
together in a bowl.
(2) Add the vegetable oil and the molasses, stirring
until well blended.
(3) Mix the baking soda into the boiling water and
immediately stir into the mixture.
(4) Add the flour gradually, mixing well after each
addition.
(5) Mix in the beaten eggs.
(6) Pour into a greased 9x13 baking pan and bake at
350 deg. F for 40 minutes.
