TOFU-BALLS - Vegetable and tofu
This recipe comes from the New Recipes from Moosewood
taurant cookbook. They said that these vegetarian
"one of our most popular standard lunch items".
skeptical, so I gave it a try and indeed, they
INGREDIENTS (3 dozen)
3 Tbsp vegetable oil
4 cloves garlic, crushed
1 large onion, finely chopped
1 large carrot, grated
1 green pepper, finely chopped
1 1/2 tsp dried basil
1 tsp ground fennel
3/4 tsp dried oregano
2 large eggs
1 cup bread crumbs
3/4 cup walnuts, very finely chopped
1/4 cup fresh parsley
2 Tbsp Dijon mustard
1 1/2 Tbsp
1 Tbsp tamari soy sauce
3 firm tofu cakes
(1) Preheat oven to 350 deg. F.
(2) Saute the garlic, onion, carrot, pepper,
fennel and oregano in the oil for 10
(3) In a large bowl, beat the eggs, then
add all other
ingredients except the tofu.
(4) Mash the tofu and add it to the other
