Hot Spice Mix
Garam masala translates to hot spices (to warm the 
body).  It is
actually a mixture of ground sweet spices.  It's usually 
added to a
dish just before serving.
Servings:  ?
4 tbs coriander seeds
2 tbs cumin seeds
2 tbs black pepper corns
2 tsp cardamom seeds
1 tsp whole cloves
2 cinnamon sticks, 2 inches long
Dry-roast each of the spices separately in a heavy cast-iron
frying pan.  After putting each spice into the pan, 
shake the pan
until the spice turns a couple of shades darker or gives 
off a
fresh-roasted aroma.  When all of the spices are roasted, 
grind
them together to a fine powder in an electric coffee 
grinder. 
Store in an airtight jar.
Preparation and cooking time:  15 min.
Hint:  For a change, dry-roast and grind the same amounts 
of
cardamom, cloves, and cinnamon as in the previous recipe, 
then
add half a nutmeg kernel, finely grated.
