Kathy Hogan Trocheck's Green Beans
Prep: 20 min Cook: 35 min
Total Cost: $2.06

Kathy, a mother of two and a mystery writer, lives in
Atlanta. When she makes this
recipe she cooks the beans until they're very tender--just
the way southerners like them.
If she happens to have some leftover ham, she adds that
instead of the bacon. You can
also try Canadian bacon for a low-fat alternative.

3 slices bacon, cut in 1/2-inch pieces
 1/2 cup finely chopped onion
 3/4 cup water
1 pound green beans, ends trimmed and cut in 1-inch
pieces
 1 tablespoon snipped fresh dill
1/4 teaspoon each salt and pepper

1. Cook bacon and onion in a large, deep skillet 8 to
10 minutes over medium heat,
stirring occasionally, until onion is golden and tender.
2. Add water and bring to a boil over high heat. Stir
in remaining ingredients. Toss to
mix and coat.
3. Cover and cook over medium heat 18 to 22 minutes,
stirring occasionally, until beans
are very tender. Transfer to casserole or baking dish.

* Serves 6. Per serving: 89 cal, 2 g pro, 6 g car, 7
g fat, 8 mg chol, 172 mg sod. Exchanges: 1
1/4 vegetables, 1 1/4 fat
