Subj: GREEN RICE
This is a great side dish--every time I make it for a potluck at work, I am asked to share
the recipe. It comes from my husband's grandmother.
2 C. uncooked rice
2/3 C. chopped green pepper
1/3 C. minced parsley
1 C. chopped green onions
1/2 C. salad oil
1 tsp. salt
4 C. chicken broth
Combine all ingredients and place in a 2 qt. casserole dish. Bake at 350 for 45-60 minutes
or until liquid is absorbed. (I think it usually bakes a little longer than the stated time).
