Garlic Mashed Potatoes:  I do it two ways, 

1. Throw several cloves of garlic in with the potatoes to boil and then run everything
through the food mill together.  Add milk,  butter and salt to taste before whipping.  

2. Finely chop several cloves of garlic and saute in olive oil until
 brown and crunchy.  Stir the oil and garlic into the milled potatoes with milk and salt.
 The oil works instead of butter.

Onion mashed potatoes:  Slice several yellow onions (Vidalias, Walawalas, and Mauis
work great!) carmelize the onoins and then add to the milled potatoes at the end. 
Absolutely Fabulous!!
