Green Spaghetti

This is a simple way to prepare pasta, and the vegetable sauce is a
nice change  from tomato sauce.  It¹s very fast.

Servings:  2

8 oz spaghetti
1 lb frozen chopped spinach or broccoli
1/2 cup soy milk
1 clove garlic, crushed
1 Tbs margarine
Salt to taste

Cook spaghetti using the standard method.  Meanwhile, microwave
frozen spinach or broccoli to thaw and cook (about 4 minutes on
high), or steam until just cooked.  When heateed through, place in
blender with soy milk, garlic, margarine and salt.  Purée, then pour
over hot pasta.

Preparation and cooking time:  15 min.

Hint:  Do not use oil when cooking pasta - it keeps the sauce from
sticking to the noodles.  If you stir, briefly, every few minutes, the
pasta will not stick together.
