  SHRIMP WITH ORZO AND FETA CHEESE
This is a traditional greek dish and it is really a winner!
  
  1 Pound shelled and deveined shrimp(25-30ct is fine)
  1 Pound dry ORZO pasta
  4 or 5 canned plum tomatoes (crushed in your fist)
  3 or 4 cloves garlic (chopped fine)
  Fresh choped basil and oregano to taste (heavy on the basil)
  White pepper to taste
  Chopped fresh parsley (a good handfull)
  Lemon zest of one lemon
  4 or 5 oz. feta cheese (preferably sheeps milk)
  Extra virgin olive oil
  Crushed red chiles to taste
  White wine or vemouth

  First saute garlic in a little olive oil,(don`t allow it to brown of course) then add the
crushed tomatoes, red chiles,basil and oregano, white pepper, and wine (use your own
judgement on the amount) and simmer 15 or 20 minutes.
  (no salt should be needed because of the Feta but you never know)
  Add crumbled feta cheese and shrimp to the sauce; cover and simmer until shrimp are
cooked.

  While shrimp are cooking boil the orzo until al dente and drain.
  Return orzo to pot and add lemon zest, parsley, and a good measure of olive oil. Stir
over low heat for a minute or two to bring out the flavor of the lemon zest.
   - Serve orzo with sauce on top.
