Sun Dried Tomato Chicken
6 boneless chicken breasts, pounded flat
1 10 oz. package pkg chopped frozen spinach (cooked slightly and squeezed dry)
1 C sundried tomatoes, soaked
1 tbsp oregano
1 clove garlic minced
1 tbsp. minced parsley
salt and pepper
1 cup white wine
4 oz. sliced Provolone cheese
Preheat oven to 350 degrees and spray baking dish with non stick spray.
Lay chicken pieces in baking dish,sprinkle spinach on top then add seasonings. Top
with tomatoes and pour wine over. Cover and bake 20 minutes, then uncover and bake
10-15 minutes longer. Top with cheese slices the last 5 minutes of cooking. You can
adjust the spices according to your taste. Serve with hot pasta which has been tossed
with basil pesto sauce.
