Subj: King Ranch Chicken recipe
1 boiled chicken 1 can mushroom soup
1 can cream of chicken 1 can rotel tomatoes
soup 1 diced onion
chilli powder and garlic 1 diced bell pepper
powder 2 tab. margarine
1 pkg. of corn tortillas 1 cup grated cheddar
Save chicken broth and chop chicken in small pieces.
Mix soups and rotel tomatoes together. Saulte bell pepper and onions in margarine.
Soak tortillas in chicken broth for five minutes. Then line large casserole dish with
tortillas. Layer half chopped chicken over tortillas. Place half onions and peppers.
Sprinkle with chilli powder and garlic powder. Pour half soup mixture. Spinkle half
grated cheese over this. Repeat this layered process with remaining half of ingredients
ending with cheese on top.
Bake covered for one hour at 350 degrees.
