Crocked Cashew Chicken in Orange Sauce
1 2-3 lb. fryer, cut up
1/3 C frozen orange juice concentrate
1 small onion, sliced thin
1/2-1 tsp. salt
10 black peppercorns
3 tbsp. cold water with 3 tbsp. cornstarch, mixed to a smooth paste
1/4 C chopped cashews
Place chicken in slow cooker and combine orange juice concentrate with onion, salt, and
peppercorns. Pour over chicken and cook 8 hours on Lo setting of crockery cooker.
Remove chicken and peppercorns. Add cornstarch and put crockery cooker onto Hi.Stir
occasionally for 30 minutes. Skin and bone chicken and return to pot. Serve over
steamed rice or oriental noodles, garnished with chopped cashews.
