Subj:  KSchmed's Chicken Enchiladas

Here's one that's quick & easy & is my husband's favorite meal.

Boil & bone a chicken. If you're in a hurry, you can use chicken breasts or pieces. If
you're really in a hurry, you can buy an already roasted chicken in your grocery store's
deli & used that. Soften a dozen corn tortillas. Either dip them in the water you boiled
the chicken in or brush them lightly with oil (or water) and put them in the microwave
for 30 sec. to 1 min.
Chop an onion & a green pepper and parboil or cook in microwave for 1-2 minutes.
Then layer as follows in a large baking dish:
a layer of corn tortillas, a layer of chicken, a layer of onion & pepper. Repeat until all is
used.
On the top, spread 1 can of cream of mushroom soup, 1 can of cream of chicken soup &
1 can of tomato sauce. Sprinkle with chili powder until well covered. Cover with grated
cheddar cheese & top with green onions or black olives. Heat in oven at 350 until it
bubbles. You'll love it!
