Subj:  Chicken Divan With Clam Sauce

1 stalk celery (chopped)
2 Tblsp onion (chopped)
1 - 3oz can sliced mushrooms (drained)
1 - can chopped clams (with juice)
2 Tblsp flour
1/2 cup milk
1/2 stick butter (2 oz)

3/4 cup instant rice
1/2 cup water
1-1/4  to 1-1/2 lb. boneless, skinless chicken
2 Tblsp butter (melted)
1/2 Tsp salt
1/2 Tsp pepper
1/2 Tsp garlic powder
10 oz frozen broccoli spears (thawed)  (Peas work well 
too)
1/4 cup grated Parmesan Cheese
Paprika
 
     Prepare chicken ahead. Microwave it about 8 min 
on High (700 watt oven).  Cool to
room temperature.  Pull apart into double bite size 
pieces.

     Spread the instant rice across the bottom of a 
2 quart casserole.
Add the water. Even the rice out to make a bed. Distribute 
the chicken pieces evenly
across the rice bed.  Pour the 2 Tblsp of melted butter 
over the chicken. Season it by
sprinkling the salt, pepper and garlic powder evenly 
over it. Cut the broccoli spears into 
double bite size pieces and spread evenly over the chicken.

     Prepare the sauce by melting 1/2 stick of butter 
in a large saucepan over medium high
heat. Add the flour and stir until a smooth paste is 
formed. Add the onions, celery,
mushrooms, and clams with juice, stirring after each 
addition until assimilated. Slowly
add the milk, stirring until the sauce thickens. Pour 
sauce evenly over the other
ingredients. Distribute the Parmesan Cheese evenly over 
the top. Finally sprinkle with
Paprika.

     Bake in a 325 degree oven for 25 to 30 minutes. 
Serve.
