Rice Salad  (Ensalada de Arroz)

Ingredients:

   * 1 cup of white rice
   * 1 can of tuna
   * 1/4 cup of chopped celery
   * 1/2 cup of cream fresca (mayonaise may be substituted)
   * 4 teaspoons of oil
   * 2 teaspoons of paprika
   * 3 eggs
   * 1 teaspoon of mustard
   * 2 apples, peeled and chopped
   * lime juice
   * salt and pepper

Procedure:

1. Clean the rice and soak for 15 minutes. Drain. Cook in three cups of
water with salt until cooked. Let cool.

2. Cook the eggs in water for 15 minutes. Let cool, peel and chop.

3. Put cooked rice on a plate and mix with the celery, tuna, apple and egg.

4. Mix the oil, lime juice, mustard, salt, pepper, paprika and cream.

5. Pour the mix over the rice. Mix together, refrigerate and serve.
